We all love desserts. What we don't like is the guilt associated with eating it. Whenever possible I try to find a way to have my cake and eat it too! This dessert is no exception. It is simple (from 1-3 ingredients). It's healthy. It's gluten free. No sugar added. Inexpensive. Dairy free. Even baby friendly!
Ingredients
Sweet potatoes (whole, washed)
Cinnamon (optional)
Butter (optional) (or for a healthier option try coconut oil)
Place some foil on the bottom rack of your oven.
Preheat oven to 350.
Once the oven is ready place your sweet potatoes on a higher rack than your tin foil.
Bake for 40-60min depending on thickness of sweet potatoes (I can usually tell they are ready by the sweet aroma that fills the house).
Using tongs/oven mitts/kitchen towel, remove sweet potatoes from oven (they should be very very soft) and let cool for 10 minutes.
From here you have one of three options.
1. First option, (my most favourite) peel and enjoy!
2. Alternately, you can be fancy and cut in half and sprinkle some cinnamon to add that extra depth to the flavour.
3. If you really want to take this to the next level, cut in half add butter (or coconut oil) (apply like you would to a baked potato) and then sprinkle the cinnamon.
Once oven has cooled down, remove tin foil.
A simple healthy dessert with minimal prep and effort yet great sweetness. And best of all, it's a very nutritional vegetable, which means no guilt! This is also a great way to get the picky eater in your family to eat more vegetables ;)
